Hungarian Noodles with Ground Beef
What You’ll Need
8 ounces egg noodles
2 tbsp EVOO
1 pound ground beef
1/2 yellow onion, chopped
3 cloves garlic, chopped
8-10 ounces roasted red peppers
1 tbsp paprika
1 tbsp smoked paprika (optional, it adds a nice smokey flavor)
1 cup chicken broth
1/2 head of cabbage, sliced about 1/2″ thick
1/3 cup sour cream
Fresh parsley, chopped
Salt and Pepper
The How To
Bring a spaghetti pot of salted water to a boil. Add the egg noodles and cook them according to package directions.
Simultaneously, heat the olive oil in a dutch oven over medium-high heat. Don’t forget to season that meat up! Salt and pepper go a long way. Once the beef has browned, add the chopped onion and garlic to the dutch oven. Cook about 3 minutes or until onions are soft and translucent. Add the roasted peppers and paprika (or paprikas if you choose to go with that smokey flavor!). Stir everything up! Add the chicken broth and cabbage. Stir everything gently and place a lid on the dutch oven to help wilt the cabbage a little. Lower the heat and simmer for about 4 minutes or until the cabbage is soft.
Check those noodles! Strain the noodles from the spaghetti pot and put them to the dutch oven. Add the sour cream and additional salt and pepper. Stir it up! Check for proper seasoning! Finish the dish with some fresh chopped parsley and serve it with some sourdough bread!
